AL FAHM MASALA
Neyyar Al Fahm Masala helps you prepare authentic Arabic-style charcoal-grilled chicken with a deep, smoky flavour and rich spices.
Ingredients
- Chicken – 1 whole or 1 kg (skin removed, deep cuts)
- Neyyar Al Fahm Masala – 3–4 tbsp
- Yoghurt (thick curd) – ½ cup
- Ginger-garlic paste – 1 tbsp
- Lemon juice – 1–2 tbsp
- Oil – 2 tbsp
- Salt—as required
Preparation Method
- Clean the chicken and make deep cuts for better marination.
- In a bowl, mix Neyyar Al Fahm Masala, yoghurt, ginger-garlic paste, lemon juice, oil, and salt.
- Apply the marinade evenly over the chicken, ensuring it reaches the cuts.
- Cover and marinate for 4–6 hours (overnight preferred for best taste).
- Grill the marinated chicken over charcoal, in an oven, or on a grill pan.
- Cook on medium heat, turning occasionally, until well-cooked and charred on the outside.
- Rest for a few minutes before serving.
Serving Suggestion
Serve hot with khuboos, garlic sauce, mayonnaise, and fresh salad.

- Charcoal grilling enhances smoky taste.
- Basting with oil while grilling keeps the chicken juicy.
